We search far and wide for the best ranches in Texas and work directly with them to bring the highest quality meat your table. Our partner ranchers take a great deal of pride in what they do, and raise their animals with integrity. Animal welfare and husbandry and environmental stewardship are given equal priority to producing delicious, high quality meat.  We take that same approach in partnering with small, mostly urban farms in Austin and the surrounding area who provide us the fruit and vegetables for our restaurant, condiments and pickles.
